Guest guest Posted November 11, 1999 Report Share Posted November 11, 1999 * Exported from MasterCook * Crunch Coffee Cake Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Cakes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups sifted flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. salt 2/3 cup margarine (or oil) 1 cup sugar 1/2 cup brown sugar -- firmly packed 2 eggs 1 cup buttermilk 1/2 cup brown sugar -- firmly packed 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1/2 cup chopped walnuts Sift first five dry ingredients. Cream margarine and sugar until light and fluffy. Add eggs, one at a time, beating well after each. Alternately mix dry ingredients and buttermilk to creamed mixture. Spread batter in a greased and floured 13 " by 9 " by 2 " pan. In a small bowl, combine four final ingredients. Sprinkle over batter. Refrigerate 8 hours or overnight. Bake at 350 degrees for 35 - 40 minutes. Serve warm in squares. *Buttermilk substitution: I use soy milk or rice milk with a tablespoon of lemon juice added.
