Lemony Chickpea Cake

2 cups canned chickpeas -- drained and rinsed

3 Tbsp. lemon juice and juice of 1 large lemon -- divided

grated zest of 1 large lemon

4 eggs

1 cup sugar

2/3 cup flour

1/2 tsp. baking powder

confectioners' sugar -- optional

 

Preheat oven to 350 degrees. In blender puree drained chickpeas and 3 Tbsp.

lemon juice. Add zest, eggs, sugar, flour and baking powder; mix well.

Lightly butter 9 " cake pan, set in place and butter top side. Pour in

batter. bake on center rack of oven 45 minutes or until knife inserted in

center comes out clean. Remove from oven; cool on wire rack 15 minutes.

remove from pan; cool to room temperature. Just before serving, squeeze

juice of 1 lemon over cake and sprinkle with confectioners' sugar, if

desired.
