Guest guest Posted November 11, 1999 Report Share Posted November 11, 1999 * Exported from MasterCook * Lemony Chickpea Cake Recipe By : Woman's Day Magazine Serving Size : 1 Preparation Time :0:00 Categories : Cakes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups canned chickpeas -- drained and rinsed 3 Tbsp. lemon juice and juice of 1 large lemon -- divided grated zest of 1 large lemon 4 eggs 1 cup sugar 2/3 cup flour 1/2 tsp. baking powder confectioners' sugar -- optional Preheat oven to 350 degrees. In blender puree drained chickpeas and 3 Tbsp. lemon juice. Add zest, eggs, sugar, flour and baking powder; mix well. Lightly butter 9 " cake pan, set in place and butter top side. Pour in batter. bake on center rack of oven 45 minutes or until knife inserted in center comes out clean. Remove from oven; cool on wire rack 15 minutes. remove from pan; cool to room temperature.
