Easy Vegetable Lasagna

1 pound sliced mushroom

1 large onion -- chopped

4 cloves garlic -- minced

1 pound cottage cheese

1/2 pound crumbled feta cheese

1/2 cup grated Parmesan cheese

1 teaspoon oregano

4 cups tomato OR spaghetti sauce

1 pound lasagna noodles

1 10 oz package frozen chopped spinach -- thawed and drained

4 ounces shredded skim milk mozzarella

 

Combine mushrooms, onions, and garlic in bowl. Cover and microwave for 3

minutes on high. Combine cottage cheese, feta cheese, and half the Parmesan

with the oregano. In a microwavable lasagna pan, layer sauce, noodles, cheese

mixture, spinach, and mushroom/onion mixture. Repeat until all these

ingredients are gone. Top with mozzarella cheese and the remaining Parmesan.

Cover with double plastic wrap. Refrigerate overnight. Remove pan one hour

before baking. Microwave on medium-high 30 minutes more. Let stand 5 minutes

before serving.
