Guest guest Posted November 11, 1999 Report Share Posted November 11, 1999 * Exported from MasterCook * Lasagna Roll-Ups Florentine Recipe By :Classico - Italian Foods to Savor Serving Size : 9 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 9 lasagna noodles -- cooked as package directs and drained 2 tablespoons butter 1 tablespoon flour 1 1/2 cups half and half 1/2 cup freshly grated Parmesan cheese 1/8 teaspoon pepper dash nutmeg 1 15 or 16 oz container ricotta cheese 1 10 oz package frozen chopped spinach -- thawed and drained 1 cup shredded mozzarella cheese 1/4 cup freshly grated Parmesan cheese 1 egg chopped fresh parsley (optional) In medium saucepan, melt butter; stir in flour. Gradually add half-and-half; mix well. Over low heat, cook and stir until slightly thickened. Stir in 1/2 cup Parmesan, pepper, and nutmeg; heat through. Remove from heat; set aside. Preheat oven to 350F. In medium bowl, combine ricotta, spinach, mozzarella, 1/4 cup Parmesan, and egg. Spred about 1/3 cup cheese mixture on each lasagna strip; roll up. Pour 1/2 cup sauce into bottom of 11 x 7-inch baking dish. Arrange lasagna roll seam-sides down, in dish; top with remaining sauce. Cover; bake about 35 minutes or until hot.
