Lasagna Stroganoff Skillet

4 ounces uncooked dried mini lasagna noodles

1 tablespoon LAND O LAKES Roasted Garlic Butter w/

Olive Oil

1/2 cup frozen chopped onion

1 8 oz package fresh sliced mushrooms

3/4 cup light sour cream

3/4 cup nonfat ricotta cheese

1/4 cup water

1/2 cup freshly shredded Parmesan cheese

salt

coarsely ground pepper

fresh oregano leaves

 

Cook noodles according to package directions. Drain.

Meanwhile melt garlic butter in a 12-inch skillet until sizzling; add onions and

mushrooms. Cook over medium-high heat, stirring occasionally, until onion is

softened (6 to 8 minutes).

Reduce heat to medium; add sour cream, ricotta cheese, and water. Continue

cooking, stirring occasionally, until sauce is heated through (3 to 4 minutes).

Add cooked noodles; stir to coat. Continue cooking, stirring constantly, until

mixture is heated through (3 to 4 minutes). Stir in Parmesan cheese. Season to

taste with salt and pepper. Garnish with oregano leaves. Serve immediately.

NOTES : Substitute 1 tablespoon butter and 1 teaspoon chopped fresh garlic for
