Portobello Pizza

2 tablespoons butter

1 medium (1 cup) onion -- sliced

1 6 oz pkg (2 cups) sliced portobello mushrooms -- cut into pieces

4 medium (4 cups) zucchini AND/OR yellow summer squash -- cut into

1/4-inch slices

1 medium red bell pepper -- cut into strips

4 6-inch prebaked Italian pizza crusts

8 1 ounce each slices deli provolone cheese

 

Melt butter in 12-inch skillet until sizzling; add onion and garlic. Cook over

medium heat, stirring occasionally, until onion is softened (4 to 5 minutes).

Add mushrooms, zucchini, and red pepper. Continue cooking, stirring

occasionally, until vegetables are softened (7 to 8 minutes).

Heat oven to 350F. Top 1 pizza crust with 1 cup cooked vegetables; cover with

two slices cheese. Repeat with remaining ingredients.

Bake for 5 to 6 minutes or until cheese is melted.
