Spinach and Cheese Stuffed Shells

12 jumbo shells

1 10 oz package frozen chopped spinach -- thawed and drained

1 cup low-fat ricotta cheese

1/2 cup freshly grated Parmesan cheese

1 egg white -- slightly beaten

2 tablespoons milk

1 26 oz jar Classico di Napoli (tomato and basil)

pasta sauce

1/2 cup shredded mozzarella cheese (optional)

 

Cook shells according to package diections. Drain. Preheat oven to 350F. For

filling, in small bowl, combine spinach, ricotta, Parmesan, egg white, and milk.

Stuff each shell with about 2 tablespoons filling.

Pour about 1 cup pasta sauce into an 8-inch square baking dish. Arrange

stuffed shells in baking dish. Pour remaining sauce over shells. Cover; bake

for 15 minutes. Uncover, bake about 15 minutes more or until heated through.

Sprinkle with mozzarella cheese if desired, let stand 5 minutes.
