Guest guest Posted November 12, 1999 Report Share Posted November 12, 1999 * Exported from MasterCook * Potato & Leek Pizza Recipe By :Land O Lakes Fast-Scratch Vegetarian Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 medium potatoes -- thinly sliced 1 cup (1/8-inch) sliced leeks 3 tablespoons water 1 10 oz round pre-baked thin crust Italian bread shell OR pre-baked pizza crust 1/2 cup fat-free sour cream 2 ounces Swiss cheese -- finely shredded 2 teaspoons chopped fresh rosemary 1/4 teaspoon pepper 1/4 teaspoon salt, if desired Heat oven to 425F. Place potatoes in microwave-safe baking dish. Top with leeks; sprinkle with water. Cover; microwave on HIGH until potatoes are fork tender (3 to 6 minutes). Place bread shell on baking sheet, spread with sour cream to within 1/2 inch of edge. Arrange potato slices and leeks over sour cream. Sprinkle with cheese, rosemary, pepper, and salt. Bake for 8 to 10 minutes or until cheese is melted.
