Tofu: Freezing and Defrosting directions

Open boxes of Mori-Nu Extra Firm (Lite or Regular). According to the recipe,

slice either lengthwise, crosswise or into cubes. Place on a baking tray or

plate and cover with plastic wrap. For convenience, you can open a number of

packages and simply layer the slices on the baking tray, covering each layer

with plastic wrap. Cover and freeze at least 3 hours or prefeable overnight.

I've found that the longer you pre-freeze, the better the results. If you want

to store a supply in the freezer, you can use them as needed. You'll be very

pleased with the results when you defrost them. TOFU TIP: Freeze a few boxes

of bite sized tofu cubes on a cookie sheet. When completely frozen, fill a zip

lock bag with the cubes. Add frozen cubes to soups, and stews straight from the

freezer.

Defrosting Directions:

Method 1

Remove cutlets or cubes from freezer; place in a bowl with very hot water until

fully defrosted. Place on paper or cloth towels to remove remaining moisture.

Method 2

Remove from freezer. Place in microwaveable dish and micro on high for 3 or 4

minutes. Place on paper or cloth towels to remove remaining moisture.

Method 3

Let defrost for about an hour at room temperature or overnight in the

refrigerator. Drain and pat dry.
