Guest guest Posted November 16, 1999 Report Share Posted November 16, 1999 * Exported from MasterCook * Very Veggie Burgers Recipe By :Pillsbury, Burgers, Wraps, and Sandwiches Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup uncooked regular long-grain white rice 2/3 cup water 1 15 oz can black beans -- drained and rinsed 1 cup chopped fresh mushrooms 1/2 cup sliced green onions 1/2 cup chopped roasted red bell peppers(from 7.25 oz jar) 1/4 teaspoon garlic powder 1/2 cup Progresso Italian Style Bread Crumbs 4 1 1/2 oz slices provolone cheese -- halved 1 cup shredded lettuce 4 burger bun -- split ketchup, if desired Cook rice in water as directed on package. In food processor bowl with metal blade, combine cooked rice, black beans, mushrooms, onions, roasted peppers, and garlic powder. Pulse to coarsely chop mixture. Add bread crumbs; pulse to mix. DO NOT PUREE. Shape mixture into 4 patties, 1/2 inch thick; place on broiler pan. Broil 4 to 6 inches from heat for 10 to 12 minutes or until patties are thoroughly heated, turning once. Place 2 pieces of cheese on each patty; broil an additional 1 minute or until cheese is melted. Place lettuce and patties in buns. Top patties with ketchup.
