Guest guest Posted November 15, 1999 Report Share Posted November 15, 1999 * Exported from MasterCook * Mock Vegetabe Pasta Recipe By :Ken Hom, Asian Vegetarian Feast Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds zucchini 1 tablespoon salt 1 tablespoon peanut oil 1 tablespoon finely chopped garlic 2 teaspoons finely chopped fresh ginger 2 tablespoons finely chopped fresh coriander 2 tablespoons finely chopped scallions, green parts only Cut the zucchini into long thin strips resembling pasta. Put the strips into a colander and sprinkle with salt. Let them stand for 20 minutes. Then wrap the zucchini in a linen towel and gently squeeze out the excess liquid. Heat a large frying pan or wok over moderate heat and add the oil. Put in the garlic and ginger and stir-fry for 30 seconds. Add the zucchini, fresh coriander, and scallions and continue to stir-fry for 4 minutes or until the zucchini is thoroughly heated through.
