Guest guest Posted November 17, 1999 Report Share Posted November 17, 1999 * Exported from MasterCook * Creamy Peanut Butter Pie Recipe By :Akasha Richmond, The Art of Tofu Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- canola oil cooking spray 1 1/2 cups chocolate graham cracker crumbs 1 tablespoon canola oil 4 tablespoons maple syrup 1 package Mori-Nu Lite Tofu (extra firm) -- pureed 8 ounces tofu cream cheese 2/3 cup unrefined cane sugar 1/2 cup reduced fat peanut butter 1 teaspoon vanilla extract 2 tablespoons clover honey 1/4 cup fat-free chocolate syrup Position a rack in center of oven and preheat to 350F. Coat a 9 or 10-inch round pie pan with cooking spray. Mix crumbs, canola oil, and maple syrup together and press into prepared pan. Place remaining ingredients except chocolate syrup in the container of a food processor, puree until smooth and pour into the crust. Bake for 30 minutes. Let cool for 30 minutes and then refrigerate overnight or for 5-6 hours before serving.
