Guest guest Posted November 22, 1999 Report Share Posted November 22, 1999 * Exported from MasterCook * Chocolate Cheese Pie Recipe By :Skinny Chocolate by Phyllis Magida and Barbara Grunes Serving Size : 10 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- CRUST 3 tablespoons diet margarine 2/3 cup graham cracker crumbs FILLING 1 1/2 cups 1% cottage cheese -- at room temperature 1 cup no-fat cream cheese -- at room temperature 1/3 cup skim milk -- at room temperature 1/2 cup skim milk (for whipped toppiing) 1 tablespoon aspartame sweetener 1 teaspoon vanilla extract 1/2 cup water 1 envelope plus 1 1/2 teaspoons unflavored gelatin 1 envelope whipped topping mix 1/3 cup unsweetened Dutch cocoa Crust: Melt margarine and mix with graham crumbs. Press crumbs firmly against bottom and about 1/2 inch up sides of 10-inch pie pan. Bake in 375F oven 5 minutes; remove and allow to cool. Filling: Place cottage cheese and cocoa in food processor or blender and blend a few seconds until smooth. Add cream cheese, 1/3 cup skim milk, aspartame, and vanilla and pulse until well mixed. If necessary, stop processor and scrape down sides of bowl. place 1/2 cup water in top of double-boiler and sprinkle gelatin over water to soften. Place double-boiler over simmering water until gelatin is melted. use rubber spatula to scrape gelatin into cheese/cocoa batter, mixing well. Cover batter annd refrigerate until gelatin is consistency of very thick egg whites. Transfer batter to electric mixer bowl and beat for a moment. Transfer batter back to first bowl. Place whipped topping mix in electric mixer bowl. Add remaining 1/2 cup milk and stir well wiith wire whisk. Beat topping according to package directions until stiff. Add cheese/cocoa batter to mixer bowl. Beat a few seconds until well combined. Spoon batter into pie pan. Lay piece of waxed paper over filling and refrigerate, until set, about 4 hours.
