Serve with green salad. * Exported from MasterCook Mac * Carrot-Potato Pancakes Recipe By : The Vegetarian Times Complete Cookbook Serving Size : 1 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 carrot -- coarsely grated 1 large russet potato, peeled -- coarsely grated 1 tablespoon unbleached white flour 1 large egg or equivalent egg substitute -- lightly beaten 1 teaspoon dried thyme 1/4 teaspoon salt 1/4 teaspoon black pepper -- freshly ground nonstick cooking spray In a large bowl, combine the carrot, potato, flour, egg, thyme, salt and pepper. Lightly spray a skillet with nonstick cooking spray. Drop 1/4-cup amounts of the potato mixture onto the skillet, flattening the pancakes with a spoon if necessary. Fry until lightly browned on one side, about 3 minutes; then fry 3 minutes on the other side. Drain on paper towels.
