Latkes are potato pancakes that are especially popular during Chanukah.

This is much lower in fat than the traditional fried version. They are

delicious topped with applesauce.

Potato Latkes

1 1/2 pounds potatoes -- grated

2 small onions -- minced

3 tablespoons cornstarch

1 tablespoon fresh parsley -- finely chopped

dash black pepper -- freshly ground

2 tablespoons soy sauce

non-stick cooking spray

 

Mix all the ingredients in a bowl. Coat a skillet with non-stick cooking

spray. Form 3-inch patties and cook over medium heat until crisp on both

sides.
