Sweet Marinated Tofu with Spicy Peanut Sauce

Amount Measure Ingredient -- Preparation Method

1 pound extra-firm tofu -- cut in half and then into

1/2-inch-thick slices

2 tablespoons soy sauce

2 or 3 teaspoons brown rice syrup

1/4 cup toasted sesame oil

2 teaspoons prepared mustard

2 tablespoons fresh ginger juice (see notes)

3 or 4 cloves crushed garlic

1 cup spring or filtered water

SPICY PEANUT SAUCE

2 teaspoons toasted sesame oil

1 tablespoon grated onion

1 clove garlic -- minced

2 teaspoons chili powder

1 cup unsweetened peanut butter

soy sauce

1 tablespoon brown rice syrup

juice of 1 lemon

spring or filtered water

 

Place tofu slices on a dry kitchen towel and pat excess water off the surface.

Whisk together remaining ingredients for a marinade and pour into a small

saucepan. Bring to a boil, reduce heat, and simmer, uncovered, 10 minutes.

Place tofu pieces in a shallow dish and spoon hot marinade over top, covering

completey. Allow to marinate at least 1 hour before serving or up to 12 hours

in the refrigerator.

Prepare sauce: Heat sesame oil in a small pan. Add onion, garlic, and chili

powder and cook, stirring, over medium heat 2 to 3 minutes. Add peanut butter,

a dash of soy sauce, and rice syruo. Stir well and simmer over very low heat 5

minutes. Remove from heat, stir in lemon juice and enough water to make the

sauce as thick or thin as you desire. Serve tofu at room temperature with

sauce.
