Slow Cooker Side Dishes

 

Amount Measure Ingredient -- Preparation Method

1/4 cup millet -- uncooked

1/4 cup barley -- uncooked

1/3 cup brown rice -- uncooked

1 cup onions -- chopped

1 cup green pepper -- chopped

1/2 cup carrots -- finely chopped

16 ounces canned kidney beans -- drained

8 ounces salt free tomato sauce -- or regular

16 ounces canned tomatoes -- drained

reserve liquid

1 1/2 cups frozen corn

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon garlic powder

salt and pepper -- to taste

 

Just throw it all in the crockpot in the morning and return home to a

hearty dish of grains and beans. This serves 8 as a side dish and 4 to 6

as a filling main course. (You can use any combination of grains. Just

use about 1 cupful altogether.)

 

Combine all ingredients in a crockpot. Add water to reserved tomato liquid

to equal 2 1/2 cups. Stir into grain mixture. Cover and cook on low

setting 8 hours. Stir before serving.

 

Makes 8 servings. 168 Calories, 7 g protein, 2 g, fat 33 g, carbohydrate,

177 mg sodium, 0 mg cholesterol

1 1/3 vegetable servings, 1/2 protein serving, 1 1/4 bread serving

1 cup orange juice

1 teaspoon orange rind -- grated fresh

3 tablespoons sugar -- or substitute

2 tablespoons cornstarch

6 small oranges

peeled and sectioned

(Discard white membrane)

 

Makes 4 servings.

 

Our favorite time to make this refreshing, sweet pudding is when navel

oranges are in season. Serve it in tall-stemmed sherbet glasses for an

easy yet elegant dessert.

 

In a small saucepan, combine all ingredients, EXCEPT orange sections. Stir

to dissolve cornstarch. Bring to a boil over medium heat, stirring. Boil

2 minutes, stirring. Remove from heat.

 

Add orange sections and mix gently.

 

Pour into 1 bowl or 4 individual serving bowls.

 

Chill.

 

Each serving provides: 165 calories, 2g protein, 0g fat, 41g carbohydrate,

1mg sodium, and 0mg cholesterol. 2 fruit servings, 51 additional calories

Amount Measure Ingredient -- Preparation Method

1 pound medium or firm tofu

sliced and drained well between towels

1 tablespoon onion -- finely chopped

2 tablespoons celery -- finely chopped

1 tablespoon nonfat mayonnaise -- +1 tsp

1 tablespoon sweet pickle relish

1 teaspoon vinegar

1 teaspoon mustard powder

1 1/2 teaspoons sugar

1/2 teaspoon turmeric

1/8 teaspoon dried dill weed

2 teaspoons dried parsley

salt -- to taste

pepper -- to taste

 

Makes 4 servings.

 

One of the beauties of tofu is that it takes on the flavor of whatever you

add to it, as in this recipe where it masquerades as egg salad. Serve on

toast with lettuce and tomato and even you won't know the difference.

 

Place drained tofu in a large. bowl and crumble with a fork. Stir in onion

and celery.

 

In a small bowl, combine remaining ingredients, mixing well. Add to tofu

mixture. Mix well.

 

Chill several hours to blend flavors.

 

Each serving provides: 115 calories, 9g protein, 7g fat, 6g carbohydrate,

82mg sodium, and 2mg cholesterol. 1/2 fat serving, 1 1/4 protein

servings, 19 additional calories.
