Guest guest Posted December 2, 1999 Report Share Posted December 2, 1999 Baked Apples Diane's Apple Crisp * Exported from MasterCook * Baked Apples Recipe By : The New Laurel's Kitchen, by Robertson et. al. page 313 Serving Size : 4 Preparation Time :0:00 Categories : Desserts Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 large flavorful apples 1/4 cup toasted wheat germ 1/4 cup raisins 1/4 cup chopped walnuts or filberts 1/2 lemon -- zest of 1/8 teaspoon cinnamon 1 tablespoon brown sugar 1 pinch salt 1 tablespoon flour 3/4 cup apple juice Preheat oven to 350F. Core apples and place in a greased baking dish with a cover. It's good if the apples are a snug fit: if not, cut up a fifth apple in quarters and tuck it around. Mix the wheat germ, raisins, nuts, lemon zest, cinnamon, sugar, and salt and press lightly into the apple cores. Mix the flour and apple juice and pour over the apples. Bake 40 minutes, or until the apples are very soft. Let cool slightly before serving for best flavor. Serves 4. VARIATION: Substitute 2 tablespoons toasted sesame seeds for the nuts, and use 6 tablespoons of raisins instead of 4. (This is a delightful combination.) - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Diane's Apple Crisp Recipe By : The New Laurel's Kitchen, by Robertson et. al. page 313 Serving Size : 8 Preparation Time :0:00 Categories : Desserts Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 apples (green pippins are best) 1 lemon -- juice of 1 teaspoon cinnamon 2 tablespoons whole wheat flour 3/4 cup raisins water or apple juice ***TOPPING*** 1 cup rolled oats 1/3 cup toasted wheat germ 1/2 cup whole wheat flour 1/2 teaspoon salt 2 teaspoons cinnamon 1/2 cup brown sugar 1/2 cup butter or oil This homey, quickly-made favorite, with perhaps a little yogurt alongside, can stand proudly next to the most exotic dessert. Preheat oven to 375F. Slice apples until you have enough to fill a greased 9 x 13 " baking dish. Mix the apples in a bowl with lemon juice, cinnamon, flour, and raisins. Return them to the baking dish, adding enough water or apple juice to cover the bottom. Mix topping in a bowl and press onto top of apples. Bake for 25 minutes, or until apples are soft.
