Guest guest Posted December 4, 1999 Report Share Posted December 4, 1999 * Exported from MasterCook * Potato Latkes Recipe By : The New Laurel's Kitchen Serving Size : 1 Preparation Time :0:00 Categories : Breakfast Potatoes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon onion -- or more 1 tablespoon oil -- (1 1/3 ounces) 2 teaspoons active dry yeast 1 cup warm milk, stock, or water 1 medium potato 1 egg -- beaten 1 teaspoon salt -- (scant) 1/2 cup whole wheat flour 1/4 cup wheat germ Saute onion in oil. Dissolve yeast in liquid. Grate potato and mix together with egg, salt, flour and wheat germ. Add the onion with its oil. Let rise 30 minutes. Stir down. Cook over medium heat on lightly oiled griddle until browned on each side, about 6 to 7 minutes. Serve with applesauce and yogurt or Mock Sour cream. Makes 8 pancakes.
