One-Dish Meal

Amount Measure Ingredient -- Preparation Method

1 1/2 c long-grain rice

1 lg. onion -- sliced thin

3 lg. carrots -- sliced thin

2 lg. potatoes -- sliced thin

 

 

Layer the ingredients in a 9x13 baking dish:

 

Lightly salt & pepper each layer as you put it in the dish. Pour

4-1/2 c. V-8 juice over all. Bake at 325 for 1 hr. 15 min to 1-1/2 hours.

 

You can also add 1 lb. equivalent of hamburger substitute & layer

above the rice.
