The book describes it's recipes as low-fat, but I really don't know.

Buckwheat, Bows, and Mushrooms

1 cup medium-grain buckwheat groats

2 egg whites

2 cups boiling water

6 ounces bow-shaped egg noodles

1/2 teaspoon salt

1/4 teaspoon pepper

1 1/2 tablespoons canola oil

1 cup chopped onion

1/3 pound fresh brown, shiitake or white mushrooms

 

Cook groats in a dry nonstick skillet over medium heat until toasted, about 2 to

3 minutes. Stir in egg ehites until groata are coated. Stir in boiling water.

Cover skillet. Cook over medium heat, stirring occasionally, about 10 minutes

or until all the liquid is absorbed.

While groats are cooking, cook bows in salted water according to package

directions. Drain.

Add bows to groats. Season with salt and pepper.

Heat oil in a nonstick pan. Fry onion and mushrooms over medium heat, stirring

occasionally, until soft. Toss with buckwheat and bows. Serve hot.
