Guest guest Posted December 6, 1999 Report Share Posted December 6, 1999 * Exported from MasterCook * Won Ton Soup Recipe By :Barbara Grunes and Virginia Van Vynckt - All-American Vegetarian Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 green onions -- minced 1/2 cup drained water chestnuts -- minced 4 dried shiitake mushrooms -- reconstituted in boiling water, trimmed, and minced 1/2 cup bean sprouts (that have been rinsed in hot water, drained, and chopped) 1/2 teaspoon grated fresh gingerroot 1 egg white -- lightly beaten 24 won-ton wrappers 4 green onions -- minced 1/2 teaspoon dark sesame oil 8 cups vegetable stock OR 5 cups canned broth diluted with 3 cups water 1/2 cup chopped watercress 1 teaspoon honey 1 teaspoon low-sodium soy sauce 1/8 teaspoon pepper Keep won ton wrappers under a damp towel so they don't dry out. Mix all filling ingredients (first 6 ingredients) in a bowl. Bring a pot of lightly salted water to a boil. Have a small bowl of water handy to seal won tons. Place a won ton on the table with one point facing you. Put about 1 teaspoon of filling on bottom half of wrapper. Working quickly so won ton does not dry out, brush edges with water. Fold top of wrapper over filling, pressing edges of wrappers together to seal it securely. Bend won ton as though you were going to fold it in half again and press the remaining 2 points together. Lightly flour a cooie sheet. Set won tons on flour to keep from sticking and cover with plastic wrap. Repeat filling and folding won tons until wrappers and filling are used up. Cook as quickly as possible to keep from drying out. Slide won tons into a pot of boiling water and cook over medium-high heat about 6 minutes. With a slotted spoon remove won tons to a large, shallow bowl. Add onions and oil. Bring stock to a boil, then reduce to a simmer. Add won tons just to heat through. Ladle soup and won tons into individual soup bowls. Sprinkle with watercress and serve warm.
