The text may sound a little bit *weird* because I translated it myself. I must confess I haven't done them yet. Please let me know when you made them. TO ALL OF YOU: If anybody by any chance finds a recipe for homemade soba noodles, please let me know!!! Marita (Germany) @@@@@ Wholewheat Pasta 7 oz wholewheat flour; sieved 1.8 oz soyflour pinch of salt 1/2 cup water; lukewarm 1 egg 1 tbsp vegetable oil Mix together the flours and salt. Add water, egg and oil and knead until the dough is firm. Place the dough in a bowl and cover with a cloth. Let stand for 30 min. Make tagliatelle style pasta and let dry for 30 min.
