Could serve this with mild mushroom sauce or a spicy chutney or sweet potato puree. With stir fry of vegetables center it in a bowl of vegetable soup (big crouton). could use other grains. ... just caught me... -pat * Exported from MasterCook * Bulgur Pesto Timbales Recipe By :Craig Wollam, Chef Serving Size : 6 Preparation Time :0:00 Categories : Grains Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup coarse-grain bulgur 2 cups flavorful broth 1/2 cup orzo pasta 3 green onions -- chopped 1/4 cup pine nuts -- toasted 1 tablespoon chopped fresh parsley 2 eggs -- beaten 1/4 cup whipping cream 2 tablespoons pesto sauce salt and black pepper Combine the bulgur and the broth in a small saucepan. Brint to a boil and simmer, covered, 15 minutes until the bulgur has absorbed the broth. Set aside. In antoher small saucepan, bring 2 cups of water to a boil. Add orzo and cook until jsut tender. Drain well and set aside to cool. Combine the cooked bulgur, drained orzo, and the remaining ingredients in a mixing bowl. Pack the misture into well-greased timbale olds and place in a baking pan. Fill the pan with hot water so that it comes one third of the wayy up the sides of the molds. Bake, uncovreed, in a 375F oven for 45 minutes. Remove the baking pan from the oven and remove the molds from the pan. Invert the timbales onto plates. If you have any trouble getting the timbales out, run the blade of a table knife around the inside of the molds.
