Does anyone else own this new cookbook? I haven't made anything out of it

yet, but have several recipes selected, such as these.

Chili Mix

Amount Measure Ingredient -- Preparation Method

1/4 cup white flour

1/2 cup dried minced onion

2 tablespoons chili powder

OR 1 tablespoon chili powder

plus 1 tablespoon Mexican seasoning

2 teaspoons salt

2 teaspoons dried red pepper flakes

2 teaspoons dried minced garlic

2 teaspoons sugar

2 teaspoons ground cumin

2 teaspoons unsweetened cocoa powder

 

Makes 3/4 cup

 

Authentic chili recipes often include unsweetened chocolate, which gives

the dish a savory flavor. Our mix provides a fast way to make a number of

differed chili dishes.

 

In a jar with a tightly fitting lid, mix all ingredients.

 

Use with Three-Bean Chili, Tofu Chili and Old-Fashioned Meatless Chili with

TVP and Beans.

Old-Fashioned Meatless Chili With Tvp And Beans

Amount Measure Ingredient -- Preparation Method

7/8 cup boiling water

1 cup dried textured vegetable protein -- (TVP)

1 tablespoon olive oil

1 medium onion -- coarsely chopped

1 clove garlic -- minced

1/4 cup Chili Mix

(see separate recipe)

2 teaspoons Mexican seasoning

15 ounces canned diced tomatoes

15 ounces canned tomato sauce

15 ounces canned chili beans with sauce

6 cups cooked rice

1 cup soy cheese -- shredded

 

Makes 6 servings

 

In a small bowl, pour water over TVP; set aside until all water is

absorbed, about 5 minutes. In a large pot, heat oil over medium heat, and

saute onion until golden brown, about 5 minutes. Stir in garlic, cook

until lightly golden, 1 minute (do not brown). Stir in TVP and the

remaining ingredients. Simmer, uncovered, stirring occasionally, 20

minutes. Serve over rice and top with soy cheese.

Three-Bean Chili

29 ounces canned diced tomatoes

(Two 14.5-ounce cans)

15 ounces canned chili beans with sauce

15 ounces canned garbanzo beans -- drained

(chickpeas)

15 ounces canned black beans -- drained

1 teaspoon Mexican seasoning -- to taste

(up to 1 tablespoon ) optional

1 avocado -- sliced, garnish

(optional)

1/2 cup chopped fresh cilantro -- (optional)

1/3 cup chopped scallions

(green onions)

including green portion -- (optional)

 

Makes 6 servings

 

In a large pot, heat oil over medium heat, and saute onion until golden

brown, about 5 minutes. Stir in Chili Mix; then add tomatoes, beans, and

Mexican seasoning, if desired. Simmer, uncovered, stirring occasionally,

over medium-low heat, 10 minutes.

14 ounces firm tofu -- drained

and crumbled into bite-sized pieces

15 ounces canned Mexican-style stewed tomatoes

OR diced tomatoes

15 ounces canned tomato sauce

1 cup frozen corn kernels

15 ounces canned S & W brand Pinquitos

OR other chili beans with sauce

 

Makes 6 servings.

 

In a large pot, heat oil over medium heat, and saute the onion until golden

brown, about 5 minutes. Add Chili Mix, Mexican seasoning, and tofu. Stir

until tofu is coated with the seasoning; then add tomatoes, tomato sauce,

corn, and beans. Simmer, uncovered, stirring occasionally, over medium-low

heat, 10 minutes.

To All:

I am reviewing this cookbook for Vegan Outreach. If anyone tries

any of the recipes, please e-mail me privately and let me know what you

think. Also, whoever has the cookbook -- I would be interested in hearing

other's opinions about it.

I wish I could contribute recipes myself -- not too much longer I hope!

Some of our " things " have been replaced by the insurance company (they work

with a company that does that), but no $$$$$ for the comptuer. They would

have replaced the computer too, but mine was custom built and they didn't

have anything really comparable. Sooo, I have to wait for the money to get

a new one.

Thanks for being patient with me and for keeping up the list in my

" semi-absence " .
