Guest guest Posted December 7, 1999 Report Share Posted December 7, 1999 * Exported from MasterCook * Sweet Potato Cream Cheese Pie Recipe By :Jeanne Jones - Canyon Ranch Cooking Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- CRUST 2 cups graham cracker crumbs 2 tablespoons unsweetened applesauce FILLING 1/2 cup low-fat cream cheese 5 tablespoons maple syrup 1 tablespoon honey 1/4 cup fresh orange juice 1 tablespoon ground cinnamon 1/4 teaspoon ground nutmeg 1/4 teaspoon ground cloves 1/4 teaspoon ground allspice 1/4 teaspoon ground ginger 2 tablespoons vanilla extract 2 medium sweet potatoes (1 pound) -- baked, peeled, and mashed (3 cups) 1 egg 2 egg whites This recipe was originally developed for Canyon Ranch holiday menus. However, it was so popular with the guests that we now serve it all year round. For an even more seasonal dessert, substitute mashed pumpkkin for the sweet potatoes and serve Pumpkin Cream Cheese Pie for your next holiday party. Preheat the oven to 350F. To make the crust, combine the graham cracker crumbs and applesauce in a food processor and pulse until the mixture is combined and holds together. Press it into a 9-inch pie pan. Set aside. To make the filling, combine the cream cheese, maple syrup, honey, orange juice, spices, and vanilla in a food processor and blend until smooth. Add the sweet potato and again blend until smooth. Add the egg and egg whites one at a time and blend until smooth, creamy, and light. Spoon the filling into the crust and smooth the top. Bake in the preheated oven for 45 to 55 minutes, or until the filling is set. Allow to cool on a rack and then refrigerate until cold before serving. To cut into 12 pieces, first cut into quarters.
