I'm glad you talked me into it :-) The recipes are basic and easy and the authors have tried to make everything somewhat fast. I like this section of basic mixes which are then used for several dishes. Vegetable Rice Mix--use this mixture in the following two recipes. Vegetable Rice With Savory Baked Tofu And Mushrooms Basic Vegetable Rice * Exported from MasterCook * Vegetable Rice Mix Recipe By : The Convenient Vegetarian, by Messina and Schumann, p.120 Serving Size : 1 Preparation Time :0:00 Categories : Rice Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups uncooked white or brown rice 1/2 cup dehydrated vegetables 1/4 cup vegetable broth powder 2 teaspoons salt Look for dehydrated vegetable mixes in the bulk food section of grocery stores or natural foods markets. It is often labeled as a soup mix or starter. They tend to be very expensive by weight, but 1/2 cup of this mix weighs little more than 1 ounce. For a mix with a slightly nuttier flavor, try mixing half white rice with half bulgur. Makes about 4 cups. In ajar with a tightly fitting lid, mix all ingredients. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Vegetable Rice With Savory Baked Tofu And Mushrooms Recipe By : The Convenient Vegetarian, by Messina and Schumann, p. 122 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Rice Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 8 ounces sliced mushrooms 8 ounces baked tofu -- diced 3 cups cooked Basic Vegetable Rice (see separate recipe) Makes 4 servings In a large saucepan, heat oil over medium heat, and saute mushrooms until tender, 6 minutes. Add tofu, and saute until tofu is heated through, 5 minutes. Add Vegetable Rice, and toss to combine. Tips and Variations You can buy baked tofu in the produce section of most grocery stores or you can make your own: dice 8 ounces tofu and spread out on a baking sheet. Mix 2 tablespoons soy sauce, 1/2 tablespoon pure maple syrup, and 1 tablespoon water. Pour over tofu. Bake at 350F 30 minutes. Add Vegetable Rice Mix, and return to simmer.
