Quick and Easy - Spinach and Tofu Manicotti

I really don't know if this qualifies as quick and easy but it does use frozen

spinach and I enjoy all stuffed foods.

Spinach and Tofu Manicotti

8 uncooked manicotti

2 cups spaghetti sauce

1 8 oz package fat-free cream cheese

1 teaspoon dried basil

1/8 teaspoon garlic powder

2 cups froozen cut leaf spinach -- thawed and drained

1/4 cup grated Parmesan cheese

1 12.3 oz package firm tofu -- drained, cut into cubes

2 ounces (1/2 cup) shredded mozzarella cheese

 

Cook manicotti to desired doneness as directed on package. Drain; cover to keep

warm.

Meanwhile, heat oven to 350F. Spread 1 cup of the spaghetti sauce in bottom of

ungreased 12 x 8-inch baking dish. (2 quart)

In a large bowl, combine cream cheese, basil, and garlic powder; mix well. Add

spinach, Parmesan cheese, and tofu; mix with fork until texture resembles

cottage cheese.

Stuff tofu mixture into cooked manicotti; arrange in baking dish over sauce.

Top with remaining 1 cup sauce. Cover tightly with foil.

Bake at 350F. for 25 to 35 minutes or until thoroughly heated. Uncover,

sprinkle with mozarella cheese. Let stand 5 minutes before serving.

NOTES : Tip: To quickly thaw spinach, place in colander or strainer; rinse with

warm water until thawed. Squeeze dry with paper towels.
