haven't made it yet. Looks easy. :)

Chocolate Coconut Candy

Amount Measure Ingredient -- Preparation Method

1/2 cup unsalted butter -- (1 stick)

7 ounces semisweet chocolate -- broken into pieces

1 cup shredded or flaked sweetened coconut

1 cup old-fashioned or quick-cooking oatmeal -- uncooked

Powdered sugar -- sifted, for dusting

Fluted candy cups

 

Line baking sheet with wax paper.

 

Melt the butter and chocolate in a heatproof bowl set over a saucepan of

simmering water. (Make sure bowl does not touch water.) Use a wooden spoon

to stir the butter and chocolate as they melt, beating until well-blended

and glossy.

 

Remove the bowl from the saucepan and dry the base with a dish towel. Stir

in the coconut and oatmeal; set aside until mixture cools.

 

Drop heaped teaspoonfuls of the mixture onto the lined baking sheets. Use

another teaspoon to move the mixture off the spoon and to help shape

walnut-sized balls. Put the sheets of candy into the refrigerator to set

for about 1 hour.

 

Place the candies on the counter top and sift the powdered sugar over them

to give a light dusting.

 

Carefully place the candies in individual candy cups, taking care not to

shake off too much powdered sugar. Makes about 24 candies
