Tofu Mayonnaise

10 1/2 ounces firm light tofu

6 tablespoons balsamic vinegar

1 tablespoon dijon mustard

 

Combine all the ingredients in a blender and blend until smooth.

Store, tightly covered, in the refrigerator for up to 4 days.

" This recipe offers a very viable alternative to real mayonnaise and,

unlike real mayonnaise, is made without eggs. "
