Lentil and Brown Rice Casserole

3/4 cup dried lentils -- sorted and rinsed

1/2 cup uncooked brown rice

2 10 1/2 oz cans low-sodium broth

1/4 teaspoon salt

1 cup shredded reduced-fat cheddar cheese (4 oz)

1 16 oz package frozen cut green beans OR broccoli cuts -- thawed and

drained

 

Heat oven to 375F. Mix lentils, rice, broth, salt, and 3/4 cup of the cheese in

a 2-quart casserole. Cover and bake 1 hour.

Stir in green beans. Cover and bake about 30 minutes or until liquid is

absorbed and rice is tender. Sprinkle with remaining 1/4 cup cheese.
