Guest guest Posted December 13, 1999 Report Share Posted December 13, 1999 * Exported from MasterCook * Sweet Potatoes and Black Beans Recipe By :Betty Crocker's New Eat and Lose Weight Cookbook Serving Size : 5 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 medium sweet potatoes -- peeled and cut into 3/4-inch cubes 3/4 cup orange juice 2 teaspoons cornstarch 1/2 teaspoon ground coriander 1/2 teaspoon ground allspice 1/2 teaspoon grated gingerroot OR 1/4 teaspoon ground ginger 1/4 teaspoon ground cumin 1 15 oz can black beans -- rinsed and drained 1 cup cooked rice Place sweet potatoes in 2-quart saucepan; add enough water just to cover sweet potatoes. Heat to boiling; reduce heat to low. Cover and simmer 10 to 12 minutes or until tender; drain and set aside. Mix remaining ingredients except beans and rice in same saucepan. Heat to boiling. Boil about 1 minute, stirring constantly, until thickened. Stir in sweet potatoes, beans, and rice.
