Bundles Of Fear

Amount Measure Ingredient -- Preparation Method

2 Bunches Fresh Spinach

1 Medium Red Onion

2 Medium Shallots

1 Large Clove Garlic

5 Shittake Mushrooms

1 Sprig Fresh Oregano

5 ounces Chevre (Goat's Cheese)

3 ounces Butter

1/2 Tsp. Salt

1 Tbsp. Pepper

3 Tbsp. -- ¥

1 " Fear Itself Habanero Sauce " or favourite

hot sauce

16 ounces Prepared Filo Pastry

 

MIXTURE:

Wash spinach, destem and set aside to dry. Then finely chop.

Dice onions, shallots, garlic and mushrooms

In a large skillet melt 1 ounce of butter and saute onions, shallots and garlic

till translucent.

Stir in diced mushrooms and continue to cook for one minute

Simmer for 5 minutes (approx.) or until moisture has been cooked off, stir

occasionally.

Stir in " Fear Itself " , oregano, salt and pepper

Take off heat and let stand till cool.

Crumble in Chevre and mix.

 

BUNDLE PREPARATION:

Melt remaining 2 ounces of butter in small sauce pan.

Separate filo sheets and cover with clean tea towel (to keep from drying out)

Remove towel and fold filo sheets in half

Paint half sheets of filo (one side only) with melted butter and add 2 Tbsp of

mixture to center. Fold in half (top to bottom), turn in sides and roll.

Brush bundle top with more melted butter.

Bake on cookie sheet at 375 degrees F for 15 minutes or until golden brown.

 

AN ALTERNATIVE:

Using same methods, take prepared tart shells and remove from aluminum cups. Use

1 Tbsp. of mixture, place on shell, fold in half moon shape, paint with butter

and bake for 25 minutes or until golden brown.
