Onion-Flavored Rice Mix

4 cups uncooked white or brown rice

1/2 cup vegetable broth powder

1/2 cup dried onion flakes

1/4 cup dried parsley

1 teaspoon salt

 

Makes about 5 cups

 

In a jar with a tightly fitting lid, mix all ingredients.

 

Use with Basic Onion-Flavored Rice and Onion-Flavored Rice with Sauteed

Mushrooms and Garlic (see separate recipes).

Basic Onion-Flavored Rice

Amount Measure Ingredient -- Preparation Method

2 cups water

1 tablespoon margarine

1 cup Onion-Flavored Rice Mix

(see separate recipe)

 

Makes 4 servings

 

In a medium saucepan, combine water and margarine; bring to a boil. Add

Onion-Flavored Rice Mix, and return to a simmer. Cook, covered, over

medium-low heat until all water is absorbed, about 20 minutes for white

rice or 40 minutes for brown.

 

This is an ingredient in Onion Flavored Rice With Sauteed Mushrooms And

Garlic (see separate recipe.)

Onion Flavored Rice With Sauteed Mushrooms And Garlic

Amount Measure Ingredient -- Preparation Method

1 tablespoon olive oil

1 1/2 cups sliced mushrooms -- (about 16 medium)

up to 2 cups

1 clove garlic -- minced

3 cups cooked Basic Onion-Flavored Rice

(see separate recipe)

1 teaspoon garlic-infused olive oil -- (optional)

 

Makes 4 servings

 

In a large saucepan, heat oil over medium heat, and saute mushrooms until

just slightly brown, 4 minutes. Add garlic, and saute briefly. Stir in

the Basic Onion-Flavored Rice, and add garlic-infused oil for a rich

flavoring, if desired.
