This combination of spices is used throughout northern and southern Africa in various vegetable and meat dishes. Added to red lentils with garlic, onions, and tomatoes, it makes a satisfying lentil stew. It can also be used to flavor sweetened spice cakes or rice puddings. MAKES A SCANT 2/3 CUP In a medium bowl combine all the ingredients and mix well Transfer a tightly sealed container label and date Store in a cool dark place for to 3 months.
