1 tablespoon ground cardamom

1 tablespoon ground coriander

1 tablespoon fenugreek

1 tablespoon ground nutmeg

1 tablespoon ground cloves

1 tablespoon ground cmnamon

1 tablespoon ground allspice

1 tablespoon paprika

1 tablespoon turmeric

1 teaspoon cayenne

1 tablespoon ground black pepper

1 tablespoon ground sea salt

 

Except for the absence of ginger this is very typical of a spice mixture

that is called Berbere in Ethiopia. This combination of spices is used

throughout northern and southern Africa in various vegetable and meat

dishes. Added to red lentils with garlic, onions, and tomatoes, it makes a

satisfying lentil stew. It can also be used to flavor sweetened spice cakes

or rice puddings.

 

MAKES A SCANT 2/3 CUP

 

In a medium bowl combine all the ingredients and mix well Transfer a tightly

sealed container label and date Store in a cool dark place for to 3 months.
