Core apples and remove a 1-inch strip of peel around top to prevent splitting. Brush tops and insides with lemon juice. Place apples in 8-inch square (2-qt) baking dish. In small bowl, combine raisins and cinnamon; fill center of each apple with mixture. Pour maple syrup over apples. Add 1/4 cup water to baking dish.
