Lowfat versions of some or most of the dairy would help the cals/fat.... -pat * Exported from MasterCook * Cranberry Topped Cheesecake Recipe By :Pillsbury Serving Size : 16 Preparation Time :0:00 Categories : Baking Cakes Holiday Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- CRUST: 2 cups graham cracker crumbs 1/2 cup margarine or butter -- melted FILLING: 3 eggs 2 8 oz pkg cream cheese -- softened 1 cup sugar 1/2 teaspoon nutmeg 1/4 teaspoon salt 2 teaspoons vanilla 1/2 teaspoon rum extract 3 cups dairy sour cream TOPPING: 1 cup sugar 1 cup water 1/8 teaspoon cinnamon 2 cups fresh or frozen cranberries 1/4 cup rum -- OR 2 teaspoons rum extract -- plus water to equal the measure of rum Heat oven to 375F. In medium bowl, combine crust ingredients; press over bottom and 1.5 inches up sides of 10-inch springform pan. In large bowl, beat eggs. Add remaining filling ingredients except sour cream; beat until smooth. Add sour cream; blend well. Pour into crust-lined pan. Bake at 375F. for 40 to 50 minutes or until center is set. To minimize cracking, place shallow pan half full of hot water on lower oven rack during baking. Cool. Refrigerate for several hours or overnight. Carefully remove sides of pan. To prepare topping, in medium saucepan combine sugar, water and cinnamon. Bring to a boil over high heat, stirring occasionally; boil 5 minutes. Add cranberries; return to a boil. Reduce heat; cook 5 minutes. Stir in rum. Cool slightly. Refrigerate 1 hour. Spoon topping over cheesecake. Store in refrigerator.
