I'm not sure about Bailey's being vegan (anyone know?) and lady fingers contain eggs. However, for a vegan version, you could make you own vegan cake and cut it up into little rectangles. * Exported from MasterCook * Tiramisu -- " Oh Boy, I Can't Believe It's Soy! " Recipe By :Sanaa Abourezk Serving Size : 8 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Recipe By : Sanaa Abourezk 12 ounces lite tofu -- pureed 12 ounces fat free Cool Whip 1 teaspoon vanilla extract -- high quality 3 tablespoons Bailey's Irish Cream -- (optional) 4 tablespoons maple syrup 2 packages ladyfinger cookies 1 cup coffee -- strong 2 tablespoons cocoa powder Mix the pureed tofu with vanilla extract, Bailey's Irish Cream and the maple syrup until well blended. Fold the tofu mixture into the Cool Whip. Cut the ladyfinger cookies about an inch from one side, so they will be the same length as the side of a cheesecake pan. Quickly dip each ladyfinger into the strong coffee. Do not soak them or They will fall apart. Cover the bottom of the pan with the ladyfingers. You will have a mold. Spoon tofu mixture inside the ladyfinger mold, cover with plastic wrap and refrigerate for 12 hours. Sprinkle top with cocoa powder. Cut and serve. In a food processor, puree tofu until smooth. Line a strainer with paper towels and place over a bowl. Pour tofu into strainer and refrigerate while it drains for 2 to 3 hours. (1/4 cup liquid should collect in the bowl.) 2. Pour drained tofu back into food processor. Add cream cheese, sugar, half 0f the rum, brandy, and lemon juice, and process to blend well. 3. In a large bowl, combine coffee and remaining rum. Quickly dip biscuits into coffee mixture, one by one. Turn to coat, and place each into an S-inch square baking dish, covering bottom in a single layer, about 10 cookies. (Working quickly will keep the biscuits from soaking up too much liquid.) 4. Spread half 0f the tofu mixture over cookies. Sprinkle half of the grated chocolate over top. Repeat layers with remaining ingredients.
