Guest guest Posted December 17, 1999 Report Share Posted December 17, 1999 Mozzarella And Tomato Pizza * Exported from MasterCook * Mozzarella And Tomato Pizza Recipe By : Star Tribune, 11/18/99 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Pizza Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon sugar 1 cup warm water (110 to 115 degrees) 1 package active dry yeast -- ( 1/4-oz.) 3 1/4 cups flour 1 teaspoon salt 1/4 cup olive oil plus more for bowl and dough 3/4 pound grated mozzarella cheese -- (about 2 1/2 c.) 15 ounces canned whole plum tomatoes -- drained and sliced 1 tablespoon minced fresh oregano OR 1 tsp. dried oregano 1/2 cup freshly-grated Parmesan cheese 1/2 cup shredded fresh basil Makes 4 to 6 servings. Hodges adapted his pizza recipe from one in " Pizza " by James McNair (Chronicle Books, 1987). This is a bread-machine recipe. In small bowl dissolve sugar in warm water. Sprinkle yeast over sugar-water; stir until yeast dissolves. Let stand in warm spot until foamy. Put ingredients into bread machine in this order: flour, salt, yeast mixture, olive oil. Set machine to manual; mix dough until smooth, springy ball forms. Shape dough into smooth ball and place in olive-oil coated bowl. Rotate dough to coat with olive oil. Cover bowl tightly with plastic wrap. Let dough stand in warm, draft-free spot until doubled, about 2 hours. Punch down dough. Shape dough into ball, pressing out air bubbles. Position oven rack at top of oven. Preheat oven to 500 degrees. On lightly floured surface, roll dough into large rectangle, turning dough over several times. Transfer dough to 15 1/2-by 10 1/2-inch baking pan with sides. Use fingers to fit dough to bottom and sides of pan. Generously brush dough with olive oil, making sure dough edges are well-oiled. Evenly distribute mozzarella over dough to within 1/2-inch of edge. Top with sliced tomatoes, then oregano, Parmesan and finally, basil. Sprinkle olive oil over all. Bake pizza at 500 degrees until crust and cheese are golden brown, 10 minutes.
