Cowboy Hummus

Amount Measure Ingredient -- Preparation Method

2 cups cooked red kidney beans -- (they should be quite soft)

3 tablespoons lime juice -- (to 4 tbsp)

1 canned Chipotle pepper -- (to 2)

OR 1-2 jalapenos -- seeded & minced

2 cloves garlic -- minced

2 scallions -- minced

3 tablespoons minced fresh cilantro

1/2 teaspoon ground cumin

2 tablespoons extra-virgin olive oil -- (optional)

a splash of your favorite hot sauce

salt & freshly ground pepper to taste

cayenne pepper to taste

1/3 cup vegetable stock -- (or as needed)

cilantro sprigs for garnish

 

Puree the beans, lime juice, chiles, garlic, scallions, minced cilantro, cumin,

olive oil, hot sauce, slat, pepper, and cayenne in the processor, adding enough

stock to obtain a soft puree. Correct the seasonings, adding salt, chiles, or

lime juice to taste. The mixture should be highly seasoned.

 

Transfer the hummus to a bowl and garnish with cilantro sprigs. If you want to

get fancy, make decorative lines on top with a wet spatula.
