Guest guest Posted December 19, 1999 Report Share Posted December 19, 1999 Here's one from our Cookbook of the Week: * Exported from MasterCook * Cowboy Hummus Recipe By :High-Flavor Low-Fat Vegetarian Cooking, Steven Raichlen Serving Size : 8 Preparation Time :0:00 Categories : High-Flavor Low-Fat Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups cooked red kidney beans -- (they should be quite soft) 3 tablespoons lime juice -- (to 4 tbsp) 1 canned Chipotle pepper -- (to 2) OR 1-2 jalapenos -- seeded & minced 2 cloves garlic -- minced 2 scallions -- minced 3 tablespoons minced fresh cilantro 1/2 teaspoon ground cumin 2 tablespoons extra-virgin olive oil -- (optional) a splash of your favorite hot sauce salt & freshly ground pepper to taste cayenne pepper to taste 1/3 cup vegetable stock -- (or as needed) cilantro sprigs for garnish Puree the beans, lime juice, chiles, garlic, scallions, minced cilantro, cumin, olive oil, hot sauce, slat, pepper, and cayenne in the processor, adding enough stock to obtain a soft puree. Correct the seasonings, adding salt, chiles, or lime juice to taste. The mixture should be highly seasoned. Transfer the hummus to a bowl and garnish with cilantro sprigs.
