Guest guest Posted December 20, 1999 Report Share Posted December 20, 1999 * Exported from MasterCook * Cranberry-Raspberry Compote Recipe By : Bon Appetit, December 1998 Serving Size : 1 Preparation Time :0:00 Categories : Compotes Holiday Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 12 oz pack frozen unsweetened raspberries -- thawed 1 cup fresh cranberries or frozen -- thawed 3/4 cup golden brown sugar -- (packed) 1 tablespoon fresh lemon juice 2 teaspoons grated lemon peel 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1 tablespoon vanilla extract Combine all ingredients except vanilla in heavy medium saucepan. Simmer over medium heat until cranberries burst and mixture thickens, stirring occasionally, about 10 minutes. Remove from heat. Cool slightly. Stir in vanilla. Cool to room temperature. Cover and refrigerate until cold, at least 6 hours. (Can be prepared 2 days ahead. Keep refrigerated.) Makes about 2 cups.
