Baked Oats with Vegetables and Sage

1 tablespoon light sesame oil

1/2 cup diced onion

1/2 cup diced celery

1/2 cup diced butternut squash

1 cup steel-cut oats

3 tablespoons sage leaves (rubbed if dry, minced if

fresh)

2 tablespoons thyme

1 teaspoon sea salt

2 cups water

 

Heat a heavy-bottomed pit over medium heat. Add sesame oil and saute onions

until they are clear. Add celery, squash, herbs, and oats and cook about 5

minutes to seal the edges with oil.

Add salt and water. Cover and bake in a preheated 350F oven for 30 minutes or

until grain has absorbed all liquid.
