Millet-Miso Vegetable Stew

Amount Measure Ingredient -- Preparation Method

2 teaspoons toasted sesame oil

1/2 cup coarsely cut onion

1 cup coarsely cut carrots

1/2 cup coarsely cut celery

1/4 cup coarsely cut sweet red pepper

6 cups kombu stock or another vegetable broth

1/2 cup millet -- dry-roasted

1/2 teaspoon sea salt

2 tablespoons barley miso

2 tablespoons tamari soy sauce

2 tablespoons wine (optional)

 

Heat a heavy-bottomed soup pot over medium-high heat and add oil. Saute

vegetables, sealing them one at a time. Add kombu stock and bring to a slow

boil.

Add millet and sea salt and simmer for 30 minutes. Season with miso, tamari,

and wine before serving.
