Guest guest Posted December 21, 1999 Report Share Posted December 21, 1999 You can use any kind of green leaves - kale, chard, spinach, collards are a few. * Exported from MasterCook * Pizzelle di Scammaro Recipe By :Diane Seed's Mediterranean Dishes Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- DOUGH 1 ounce fresh yeast 4 tablespoons extra-virgin olive oil salt and freshly ground black pepper 1 lb 2 oz all-purpose flour FILLING 1 lb 2 oz green leaves salt 3 tablespoons olive oil 1 clove garlic -- minced 1 teaspoon capers 7 ounces black olives -- pitted 1 tablespoon sultanas (white raisins oil for deep-frying Crumble the yeast in a small bowl and add 3 tablespoons tepid water, the oil, and some salt. Put the flour in a large bowl and gradually stir in the yeast and enough tepid water to make a stiff bread dough. You will need about 10 oz. of water. Work until the dough is smooth and elastic. Alternetively, mix the dough in a food processor. Transfer to a clean warm bowl, cover with a thick cloth and leave in a warm, draught-proof place to rise for about 1 hour. Cook the green leaves in boiling, salted water and drain carefully while they are still a good green colour. Heat the oil and gently fry the garlic until it begins to turn a golden brown. Squeeze all the water from the greens, chop and add to the pan, stirring so that they become coated with the oil. Stir in the rinsed and dried capers, olives, and the sultanas. When the dough has risen, divide into 12 small balls, working 1 at a time. Roll out very thinly on a floured board and spoon a little filling into the middle. Fold over and seal the edges with a little water and light pressure. I usually make a half moon, and press a fork around the edges. When all the pizzelle have been made, cover with a cloth. When ready to serve, heat the oil for deep frying and fry the pizzelle until golden brown, then serve. It is important not to let them brown too quickly on the outside or the inside will still be cold.
