Enjoy Jenn Ottawa, Ontario, Canada http://tlotc.dhs.org/jenn/ * Exported from MasterCook * PASTA AND VEGETARIAN SAUCE Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Meatless Dishes Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 teaspoons oil 1 large onion -- chopped 1 clove garlic -- crushed 1 green bell pepper -- seeded and diced 1 red bell pepper -- seeded and diced 1 yellow bell pepper -- seeded and diced 1 can chopped tomatoes 3 tablespoons tomato paste 1/2 pound pasta shells -- penne or rigatoni 2 tablespoons fresh basil -- chopped 1/4 pound feta cheese -- or ricotta cubed 2 tablespoons Parmesan cheese salt and pepper -- to t Sauté onion and garlic in oil for five minutes. Add bellpeppers and cook for about 5-8 minutes until soft. Add canned tomato and tomato paste and spices. Let simmer under lid for 20 minutes. Cook pasta until done and drain. Add pasta and cheeses to sauce.
