Spray large oblong baking pan with non-stick cooking spray. Pare and slice apples thinly. Drizzle with fresh lemon juice. Spread half of them into pan and sprinkle with cinnamon. Cover apples with half (2 cups) of the Kashi Good Friends and evenly drizzle half of the honey (1/2 cup) on top. Cover with the remaining apples and Kashi Good Friends. Drizzle with remaining honey and pour the orange juice on top. Bake 40-45 minutes. Cover if it crisps too quickly. Served warm from the oven or reheated, this very low fat crisp makes a delicious dessert or breakfast. And it's surprisingly high in fiber! Makes 8 servings. Variations: Add raisins or cranberries along with the apples. Substitute pears or peaches for the apples. If you use peaches, reduce baking time to 25 minutes.
