Guest guest Posted December 24, 1999 Report Share Posted December 24, 1999 I don't remember where I got this recipe, but it's a keeper. * Exported from MasterCook * Spicy Tofu Salad Recipe By : Serving Size : 2 Preparation Time :0:00 Categories : Soups & Stews Vegetarian Tofu Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ----SALAD---- 1 lb. Chinese-style extra-firm tofu 1/2 medium onion -- slivered thin 1 spring fresh mint leaves -- chopped 1 handful fresh cilantro leaves -- chopped 2 green onions -- chopped ----DRESSING---- 1 clove garlic -- finely minced 1/4 cup vegetable oil (do not use olive oil) 1/3 cup Vietnamese or Thai Chili Sauce 2 teaspoons soy sauce Juice of one lime (or about 4 Tablespoons) 1 Tablespoon rice wine vinegar (or apple cider vinegar) 1/2 teaspoon salt (or to taste) 1/2 teaspoon sugar dried chili flakes (optional -- to taste) ----OPTIONAL GARNISHES---- torn lettuce tomato quarters cucumber slices Put a large pot of liberally-salted water on to boil. Slice tofu cake into narrow finger-length sticks. Place the tofu into the rapidly boiling water. Let the tofu remain in the water until it returns to a boil and the tofu rises to the top. Drain and place on a cookie sheet in a single layer to cool. Place slivered onions, chopped cilantro, mint and chopped green onion in medium bowl. Whisk dressing ingredients together in small bowl. Carefully add cooled tofu fingers to salad ingredients and pour dressing over all. Gently stir to blend. Chill before serving. Can be made several hours ahead.
