VEGETABLE DIP

Amount Measure Ingredient -- Preparation Method

3/4 cup grated carrots -- grated super fine

3/4 cup chopped peppers -- red/green very fine

1/2 cup finely chopped onion

1 can pineapple chunks in juice -- crushed and drained

16 ounces fat-free cream cheese -- 2 (8 ounce packages)

Seasoning Salt to taste

1/4 cup chopped pecans -- chopped coarse

Optional

 

Place the Cream Cheese on a coffe filter in a stainer over a bowl to drain

excess water away. Fat Free Cream Cheese is more moist than regular and it

needs to more like regular cream cheese. After the vegetables(carrots, onion,

peppers, and the pineapple) are ready drain as much juice from them as

possible, these can be patted dry with a paper towel. Mix the cream cheese,

and vegetables really well. Add the seasoning salt (usually about 2

tablespoons) Mix well. Place in a bowl with a paper towel on top of mix and

then cover with saran wrap for about 12 hours. The paper towel will absorb any

left over juice and should be discarded before serving. After the mix has sat,

Shape into two balls and then roll in pecans or just leave in a bowl unshaped.

This is eaten on Crackers....try the Fat Free or Low fat Ritz crackers.

 

Makes 40 servings.

Each serving is enough to go ont to 7 crackers.

7 Fat free crackers = 1 point.
