It was quick and easy and very tasty. * Exported from MasterCook * Ziti, Spinach, and Mushroom Casserole (Vollstedt) Recipe By : Big Book Of Casseroles - Maryana Vollstedt Serving Size : 4 Preparation Time :0:50 Categories : Casseroles Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons margarine 4 ounces mushroom -- sliced 10 ounces frozen spinach -- thawed and drained 2 cups lowfat cottage cheese 1 cup monterey jack cheese -- grated 1/4 teaspoon thyme 1/4 teaspoon salt 8 ounces ziti pasta -- cooked and drained 2 medium tomatoes -- seeded and sliced 2 tablespoons parmesan cheese -- freshly grated Preheat oven to 350 F. In a medium skillet over medium heat, melt margarine. Saute mushrooms until tender, about 5 minutes. Stir in spinach and remove from heat. In a 2 1/2 quart cassarole dish lightly coated with cooking spray or oil, mix mushroom-spinach mixture with cottage cheese, Monterey Jack cheese, seasonings, and ziti. Place tomato slices on top and sprinkle with Pamesan cheese.
