Lentil-Amaranth Canapes Lentil-Sweet Potato Dal * Exported from MasterCook * Lentil-Amaranth Canapes Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 143 Serving Size : 1 Preparation Time :0:00 Categories : Appetizers And Snacks Beans And Legumes Mirkin's 20/30 Fat & Fiber Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups bouillon 1/2 cup tiny green or orange lentils 2 cloves garlic -- minced 2 cups cooked amaranth 2 tablespoons fresh lemon juice or lime 1 tablespoon Dijon mustard 1 teaspoon mild chili powder 1 pinch cayenne pepper -- or to taste 1/4 cup chopped fresh flat-leaf parsley 1 red or yellow bell pepper -- finely chopped Fat-free Italian salad dressing -- (optional) 2 medium zucchini cut into 1/4-inch slices Bring the bouillon to a boil in a medium saucepan over medium heat and stir in the lentils and garlic. Reduce heat and simmer 20 minutes or until the lentils are just tender, but not mushy. Drain the lentils and combine them with the remaining ingredients, except zucchini, in a serving bowl. Cover and refrigerate until served. If desired, moisten with a little dressing. Spoon the mixture onto zucchini slices. Yield: about 50 balls, per 5 balls: calories: 60, fat: 0g, fiber: 3g. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Lentil-Sweet Potato Dal Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 104 Serving Size : 1 Preparation Time :0:00 Categories : Potatoes Beans And Legumes Soups And Stews Mirkin's 20/30 Fat & Fiber Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion -- chopped 4 cloves garlic -- minced 4 cups bouillon 1 cup red lentils 1 large or 2 small sweet potatoes scrubbed and cut into 1/2-inch chunks 1 tablespoon Garam Masala Spice Blend (see separate recipe) Pinch of cayenne pepper, or to taste Plain fat-free yogurt for garnish (optional) Combine all ingredients except the yogurt in a large pot. Bring to a boil, reduce heat and simmer, uncovered, 30 to 40 minutes or until the lentils and sweet potatoes are tender. Using a hand blender or blender, puree the soup until smooth. Ladle soup into bowls. Top each serving with a spoonful of yogurt, if desired.
